Ingredients:

3 tbsp Apple cider vinegar
1 1/2 cups Sugar
3 tbsp Water
3 Fresh peaches
1/4 cup Unsalted butter

Instructions:

For the Crust:

  1. In a food processor, blend the all-purpose flour, sugar, orange zest, baking powder, and salt until combined.
  2. Add the unsalted butter and pulse until a coarse meal forms.
  3. Pour in 3 tablespoons of ice water and apple cider vinegar. Blend until moist clumps form, adding more water if needed.
  4. Gather the dough into a ball, flatten into a disk, and wrap it in plastic wrap.
  5. Chill the dough for at least 1 hour or up to 1 day.
  6. On a lightly floured surface, roll out the dough into an 11-inch round.
  7. Transfer the dough to a rimless baking sheet and refrigerate while preparing the filling.

For the Filling:

  1. Preheat the oven to 425ยฐF.
  2. In a heavy ovenproof (preferably cast-iron) 9-inch-diameter skillet with 2-inch-high sides, stir 1 1/2 cups of sugar and 3 tablespoons of water over medium heat until the sugar dissolves.
  3. Increase the heat to high and boil without stirring until the syrup turns a light amber color, swirling the pan occasionally and brushing down the sides with a wet pastry brush, about 6 minutes.
  4. Turn off the heat and add the 1/4 cup of unsalted butter. Stir until melted and smooth. Allow to cool for 2 minutes.
  5. Place 1 peach half, rounded side down, in the center of the pan. Arrange the peach quarters close together, rounded side down, in concentric circles around the peach half.
  6. Press the remaining peach half and quarters, rounded side down, atop the first layer.
  7. Cook over medium heat until the caramel is bubbling thickly, about 20 minutes.
  8. Place the chilled pastry atop the hot fruit. Let it stand for 3 minutes to soften.
  9. Tuck the dough edges around the fruit.
  10. Bake the tart until the crust is golden and the filling thickens and darkens, about 30 minutes.
  11. Cool the tart in the pan on a rack for 10 minutes.
  12. Place a platter atop the skillet and, using oven mitts, invert the tart onto the platter.
  13. Serve warm with whipped cream.
