Ingredients:

1 Peanuts
250g Milk
200g Sugar
6 Pistachios
Khoya (optional)

Instructions:

  1. Preparation: Put peanuts in a pan over medium heat. Stir fry them until they are slightly brown and the skin begins to peel off. This should take about 5-7 minutes. Once done, remove the peanuts from the pan.

  2. Grinding Peanuts: Transfer the roasted peanuts into a blender. Blend them until you achieve a fine powder consistency. Set aside.

  3. Cooking the Mixture: In a wok or heavy-bottomed pan, pour in the milk and add the ground peanut powder. Cook the mixture over medium heat, stirring continuously until it thickens slightly. This should take around 8-10 minutes.

  4. Adding Khoya (Optional): If you’re using khoya, add it to the thickened peanut mixture and mix well. Khoya adds a creamy texture and richness to the barfi.

  5. Incorporating Sugar: Once the mixture thickens further, add the sugar gradually, stirring continuously to ensure it dissolves completely. Adjust the sweetness according to your preference.

  6. Simmering: Reduce the heat to low and continue to cook the mixture, stirring frequently, for another 15-20 minutes. This allows the flavors to meld together and the mixture to thicken to the desired consistency.

  7. Garnishing and Serving: Once the mixture reaches a thick, fudge-like consistency, remove it from the heat. Pour it onto a greased tray and spread it evenly using a spatula. Sprinkle crushed pistachios over the top for a decorative touch. Allow the barfi to cool completely before cutting it into squares or diamond shapes. Serve and enjoy the delicious Peanut Barfi!
