Instructions:

1 In a large non-stick skillet, heat peanut oil and sesame oil over medium-high heat.
2 Add ginger and garlic to the skillet and cook until their aroma is released, about 1-2 minutes.
3 Stir in the sliced chicken pieces and cook until they turn golden brown, about 5-7 minutes.
4 Once the chicken is cooked through, add the peanut butter to the skillet and stir until it’s well incorporated.
5 Next, add the chopped scallions and unsweetened coconut milk to the skillet. Allow the mixture to simmer until it thickens slightly, approximately 3 minutes.
6 Season the dish with salt and pepper according to your taste preferences.
