Yield: 1 9-inch pie
Ingredients:
- 7 1/2 pears, peeled, cored, and thinly sliced
- 4 tablespoons butter
- 1/4 cup margarine
- 3 tablespoons light corn syrup
- 1 tablespoon lemon juice
- 3/4 cup all-purpose flour, divided
- 3/4 cup sugar, divided
- 2 tablespoons cornstarch
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground allspice
- 1/8 teaspoon salt
- 1/4 cup chopped pecans
Instructions:
- Begin by preheating your oven to 450°F (230°C).
- Fit a pie crust into a 9-inch pie plate according to the package directions, then gently fold the edges under and crimp them for a decorative touch.
- In a large mixing bowl, combine the sliced pears, butter, margarine, light corn syrup, and lemon juice. Gently toss the ingredients together until the pears are evenly coated.
- In another bowl, mix together 1/4 cup of flour, 1/4 cup of sugar, cornstarch, ground cinnamon, ground allspice, and salt until well blended.
- Drain the pear slices, reserving the liquid for later use.
- Arrange one-third of the pear slices in the prepared pie crust, then sprinkle one-third of the flour mixture over the pears.
- Repeat this layering process twice more, using up all the pear slices and flour mixture.
- Drizzle the reserved pear liquid over the assembled pie.
- In a separate bowl, combine the remaining 1/2 cup of flour and 1/2 cup of sugar. Using a pastry blender or your fingers, cut in the remaining 1/4 cup of butter until the mixture becomes crumbly.
- Stir in the chopped pecans, then sprinkle this streusel topping evenly over the pie.
- Place the pie in the preheated oven and bake for 10 minutes at 450°F (230°C).
- After 10 minutes, reduce the oven temperature to 350°F (175°C) and continue baking for an additional 45 minutes, or until the pie is golden brown and the filling is bubbling.
- Once baked, remove the pie from the oven and allow it to cool on a wire rack.
- Once cooled, slice and serve your Pear Streusel Pie, savoring each delightful bite!
