- In a heavy-based 3-quart pan (ensure it’s large enough), combine sugar, salt, Karo syrup, half-and-half, cream, and butter.
- Stir over low heat with a wooden spoon until the sugar is fully dissolved. This might take some time, so be patient. You can check for sugar crystals by feeling the mixture with your fingers.

- Increase the heat to medium and stir until the mixture foams to a boil.
- Add the baking soda and continue stirring vigorously.
- The mixture will expand in volume and gradually subside while turning golden.

- Insert a warmed candy thermometer into the mixture.
- Keep stirring constantly, scraping the sides, and cook over medium-low heat until the thermometer reaches 240ยฐF. Be attentive as the temperature may linger at 239ยฐF for a while before rising.

- Once the desired temperature is reached, remove the pot from heat and carefully remove the thermometer.
- Stir in the vanilla extract (be cautious, it might sputter) and incorporate it evenly.
- Add the pecans to the mixture and continue stirring swiftly.

- Keep a close eye on the mixture as it thickens, lightens in color, and becomes harder to stir.
- When it thickens enough to leave a path on the bottom of the pan while stirring, it’s almost ready.
- As soon as you notice the mixture losing its glossy shine, promptly transfer it to the prepared pan. Avoid waiting until it becomes completely matte to prevent it from drying out excessively.
