Ingredients:

  • 1/3 cup butter
  • 3/4 cup sugar
  • 2 eggs
  • 1 can (12 oz) evaporated milk
  • 1 tsp vanilla extract
  • 2 tsp cinnamon
  • 1 cup chopped pecans
  • 1/2 cup butter (for topping)
  • 1/4 tsp cinnamon (for topping)
  • 1/4 cup sugar (for topping)
  • 2 cups mashed butternut squash

Instructions:

Step Description
1 Peel the butternut squash, similar to peeling a potato.
2 Boil the squash until tender, like when making mashed potatoes.
3 Scoop out the flesh and discard any seeds.
4 Mash the cooked squash until smooth.
5 In a separate container, cream together 1/3 cup of butter and 3/4 cup of sugar. Add eggs, evaporated milk, vanilla extract, and 2 tsp of cinnamon. Mix well.
6 Measure out 2 cups of mashed squash and add it to the mixture. Stir until thoroughly combined.
7 Pour the mixture into a 11 x 7 baking pan.
8 Bake at 350°F (175°C) for 45 minutes.
9 While the squash is baking, prepare the topping.
10 Finely chop enough corn flakes to make 1/2 cup.
11 Mix together 1/2 cup chopped pecans, 1/2 cup butter, 1/4 tsp cinnamon, and 1/4 cup sugar until well combined.
12 After 45 minutes of baking, remove the casserole from the oven and evenly distribute the topping over it.
13 Return the casserole to the oven and bake for an additional 10-15 minutes, or until the topping is golden brown and crisp.
14 Ensure the topping is approximately 1/4 to 1/3 inches thick. If not, make more topping as needed.
