Description:

I first cooked this recipe 30 years ago for a bonfire party, and it has been a favorite ever since. Perfect for cozy winter nights or casual weeknight dinners, this Pork ‘n’ Bean Casserole is hearty, flavorful, and oh-so-satisfying. Whether you’re serving it up for a family dinner or a gathering of friends, it’s sure to be a hit.

Ingredients:

  • 1 1/2 lbs belly pork, cut into bite-size pieces
  • 1 tbsp butter
  • 2 onions, finely chopped
  • 1 tsp mustard
  • 1 tsp curry powder
  • 1 tbsp Worcestershire sauce
  • 1/2 cup water
  • 1 can of beans (your choice)

Instructions:

  1. Preparation: Begin by cutting the belly pork into bite-sized pieces, ensuring they are uniform in size for even cooking.

  2. Browning the Meat: In a large skillet or frying pan, heat the butter over medium heat. Once the butter is melted and sizzling, add the prepared pork pieces. Allow the pork to fry for a few minutes, stirring occasionally, until it develops a golden brown crust on all sides. Once browned, remove the pork from the pan and transfer it to a large casserole pot or Dutch oven.

  3. Cooking the Onions: In the same skillet used for browning the meat, add the chopped onions to the remaining fat. Cook the onions over medium heat until they become translucent and soft, releasing their sweet aroma. This usually takes about 5-7 minutes. Once the onions are cooked, transfer them to the casserole pot with the browned pork.

  4. Preparing the Sauce: Still using the same skillet, sprinkle the flour into the remaining fat. Stir the flour continuously, allowing it to cook and form a roux with the fat. This step helps to thicken the sauce and add a rich flavor to the dish. Cook the flour for a few minutes until it turns a golden brown color.

  5. Adding Flavor: Now it’s time to add the flavorful ingredients to the skillet. Stir in the mustard, curry powder, Worcestershire sauce, and water, combining everything into a fragrant sauce. Let the mixture come to a gentle boil, stirring constantly to prevent any lumps from forming.

  6. Combining Everything: Once the sauce has thickened slightly and all the ingredients are well combined, pour the mixture into the casserole pot with the cooked pork and onions. Stir everything together, ensuring that the pork and onions are evenly coated with the flavorful sauce.

  7. Slow Cooking: Cover the casserole pot with a lid and transfer it to a preheated oven set to Gas Mark 3 (or equivalent) for slow cooking. Allow the Pork ‘n’ Bean Casserole to simmer gently in the oven for approximately 2 hours, or until the meat is tender and the flavors have melded together beautifully.

  8. Serve and Enjoy: Once the casserole is done cooking, remove it from the oven and serve it hot. Garnish with your favorite herbs or a sprinkle of freshly ground black pepper for an extra touch of flavor. This hearty dish pairs perfectly with crusty French bread or fluffy jacket potatoes, providing a satisfying meal that’s sure to warm you up from the inside out.

Recipe Notes:

  • Doubling or Tripling the Recipe: If you’re planning to feed a crowd and need to double or triple the recipe, keep in mind that you may need to brown the meat and onions in batches to ensure even cooking and browning.
  • Using a Crockpot: While this recipe is traditionally cooked in the oven, you can also adapt it for a slow cooker or crockpot. However, note that the juices may not thicken as much, so you may need to adjust the consistency of the sauce separately if desired.
