Ingredients:

300g Basmati Rice
1 1/2 Tomatoes
4 Onions
1 Potato
2 Green Chilies
1/2 cup Coconut Milk Powder
2 cloves Garlic
1 tsp Turmeric Powder
4 – 5 Coriander Leaves
4 – 5 Cumin Seeds
1 Onion
1 Prawns

Instructions:

  1. Prepare the Masala:

    • Grind all the ingredients mentioned under ‘masala’ to a fine paste and keep aside.
  2. Saute:

    • Heat oil in a skillet.
    • Saute onion in it until golden brown.
  3. Add Tomatoes:

    • Add tomatoes, stir-fry, and cook till soft.
  4. Add Masala Paste:

    • Add the ground masala paste and saute for 1 minute.
  5. Add Spices:

    • Then add the turmeric and coconut milk powders and mix well.
  6. Cook Prawns:

    • Next, add the prawns and cook for 5 minutes, mixing occasionally.
  7. Add Water and Rice:

    • Add salt to taste and 3 cups of water.
    • Stir once, then bring to a boil.
    • Strain the rice and add it to the pot.
  8. Cook Rice:

    • Cook the rice, stirring occasionally.
  9. Add Potatoes:

    • Add the deep-fried potato quarters.
  10. Simmer:

    • Cover with a tight lid and cook on simmer for 10 minutes until all the water has been absorbed by the rice.
  11. Fluff and Serve:

    • Fluff with a fork.
    • Serve with vegetables, raita, and papads for a complete meal!
