Spinach Pies Recipe

Instructions:

Prepare Dough:
- Sift the all-purpose flour and salt into a large mixing bowl.
- In a separate bowl, sprinkle the yeast over 1/4 cup of warm water and stir until dissolved.
- Add the dissolved yeast to the flour mixture.
- Add butter and knead gently until the dough comes away from the sides of the bowl and is smooth and elastic.
- Place the dough in an oiled bowl, cover, and let it rest for 45 minutes.

Prepare Spinach Filling:
- Sprinkle chopped spinach leaves with a little salt.
- Squeeze out all the liquid from the spinach leaves using your hands.
- In a mixing bowl, combine the squeezed spinach with finely chopped onion, cumin powder, chopped green chilies, salt to taste, and lemon juice.

- Preheat your oven to 200°C (392°F).
- Divide the dough into 10-15 equal-sized balls.
- Roll each ball into a thin circle.
- Place about 1 tablespoon of the prepared spinach mixture in the center of each dough circle.
- Moisten the edges of the dough circle with water.
- Lift the dough at three points along the circumference of the circle, equally spaced apart, and pull up to join in the center, forming a pyramid shape.
- Seal the edges of the dough by pinching them together.

- Grease a baking tray and place the assembled spinach pies on it.
- Bake in the preheated oven for 30-35 minutes, or until the pies are golden brown.
