I am dedicating this delicious recipe to Barb Talkington, Barbara Mooers, Diana Neal, and Lennie, without whose advice and guidance I would never have been able to make them properly! These Scottish Raspberry Buns are a delightful treat, perfect for any occasion, from potlucks to Christmas gatherings. Bursting with the sweet tanginess of raspberries, these buns are sure to be a hit with both kids and adults alike. Plus, they’re quick and easy to make, requiring just a handful of simple ingredients.

Ingredients:

  • 8 cups self-raising flour
  • 4 cups margarine
  • 3 cups caster sugar
  • 1 egg
  • Milk (enough to make a fairly stiff consistency)
  • Raspberry jam
  • Extra caster sugar for dusting

Instructions:

Step Description
1 Preheat Oven: Set your oven to 425°F or Mark 7 to preheat it. This ensures that it’s nice and hot when you’re ready to bake your buns.
2 Prepare Baking Sheets: Grease and flour your baking sheets to prevent the buns from sticking during baking.
3 Prepare Dough: In a large bowl, sift the self-raising flour. Then, rub in the margarine until the mixture resembles fine breadcrumbs.
4 Add Sugar and Egg: Stir in the caster sugar, then add the beaten egg. Gradually add enough milk to the mixture to achieve a fairly stiff consistency.
5 Form Balls: Divide the dough into walnut-sized balls and place them on the prepared baking sheets, leaving some space between each one as they will spread slightly during baking.
6 Add Jam: Make a small hole in the center of each dough ball and spoon in a little raspberry jam.
7 Seal and Dust: Pinch the edges of the dough together to seal the jam inside. Lightly dust the tops of the buns with caster sugar for a sweet finish.
8 Bake: Place the baking sheets in the preheated oven and bake for 10 minutes. Then, reduce the heat to 350°F or Mark 4 and bake for an additional 5 minutes, or until the buns are light golden in color.
9 Cool and Serve: Once baked, transfer the buns to a wire rack to cool completely. Once cooled, store the buns in an airtight container at room temperature until ready to serve.
