Sue’s Rhubarb Platz
Description:
When I moved to Winnipeg over 20 years ago, I adopted a lady from my church as my “Winnipeg Mom”. This is her recipe. She was an excellent cook and enjoyed baking. This fruit square is really good warm with whipped cream or ice cream, but can also be served cold. Other fruit in season can be used in place of rhubarb, and in winter, you can use fruit like dried apricots.

Ingredients:
- 2 cups flour
- 1 cup sugar
- 2 1/4 teaspoons baking powder
- 1/2 cup butter
- 1 cup milk
- 2 eggs
- 1/2 teaspoon almond flavoring
- 4 cups rhubarb, diced
Instructions:
-
Prepare the Dough:
- In a large mixing bowl, combine 2 cups of flour, 1 cup of sugar, and 2 1/4 teaspoons of baking powder.
- Cut in the butter until the mixture resembles coarse meal.
-
Prepare the Batter:
- In another bowl, beat together 1 cup of milk, eggs, and almond flavoring until well combined.
- Mix the wet ingredients into the dry ingredients until just combined. It’s okay if the mixture is a bit lumpy.
-
Assemble the Platz:
- Preheat your oven to 350°F (175°C).
- Spread the batter into a greased 10×15 inch pan, ensuring an even layer.
- Cover the batter with the diced rhubarb, distributing it evenly over the surface.
-
Make the Crumb Topping:
- In a small bowl, mix together the remaining flour and sugar.
- Melt the remaining butter and stir it into the flour-sugar mixture until crumbly.
-
Finish and Bake:
- Sprinkle the crumb mixture evenly over the rhubarb layer.
- Bake in the preheated oven for 40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean. Be careful not to overbake.
-
Serve and Enjoy:
- Once baked, remove the pan from the oven and allow it to cool slightly.
- Cut the platz into 20 squares and serve warm with a dollop of whipped cream or a scoop of ice cream if desired. Alternatively, let it cool completely and serve chilled.
