Ingredients:

  • 1 garlic head
  • 1/2 cup olive oil
  • Salt and pepper, to taste

Instructions:

  1. Preheat oven: Preheat your oven to 375ยฐF (190ยฐC).

  2. Prepare garlic: Remove any loose papery skins from the outside of the garlic head. Cut off the top 1/3 of the heads to expose the cloves, saving the top for another use. Place the garlic heads in a small baking dish, cut sides up.

  3. Season: Pour olive oil over the garlic heads, ensuring each clove is coated. Sprinkle with salt and pepper for seasoning.

  4. Roast: Cover the baking dish tightly with aluminum foil and bake in the preheated oven until the cloves are 3/4 done, approximately 45 minutes. Uncover the dish and continue baking for another 15 minutes or until the cloves begin to pop out of their skins and turn golden brown.

  5. Cool: Once roasted, remove the garlic from the oven and allow it to cool slightly.

  6. Extract cloves: Squeeze the cloves out of their skins into a bowl, being careful not to burn yourself.

  7. Make paste: Add the oil from the baking dish to the roasted garlic cloves. Mix well, mashing the cloves with a fork or blending until a smooth paste forms.

  8. Store: Transfer the roasted garlic paste into an airtight container and refrigerate. It can be stored for up to one week.
