Cooking Time: 40 minutes
Total Time: 45 minutes
Servings: 2
Yield: 4 chicken thighs

Description:

An easy, succulent way to prepare chicken thighs with rosemary, resulting in tender and flavorful meat. The thighs are compressed while cooking, enhancing their tenderness. This recipe utilizes a springform pan with a large, foil-wrapped rock or brick inside to “skinny” the thighs, making it a creative and effective cooking technique. Perfect for lunch or snacks, this dish is very low in carbs and offers a savory delight that’s quick and simple to prepare, ideal for beginner cooks or those looking for an easy yet delicious meal option.

Ingredients:

  • 1 tablespoon unsalted butter
  • 1 sprig fresh rosemary
  • 4 chicken thighs
  • Coarse salt, to taste
  • Freshly ground black pepper, to taste
  • 1/3 cup dry white wine

Instructions:

  1. Preheat Oven: Preheat your oven to 350ยฐF (175ยฐC).

  2. Prepare Skillet: In a nonstick skillet, melt the unsalted butter over medium-high heat. Add the fresh rosemary to infuse the butter with its aromatic flavor.

  3. Sautรฉ Chicken Thighs: Season the chicken thighs with coarse salt and freshly ground black pepper. Sautรฉ the thighs in the skillet, skin side down, until one side is golden brown, approximately 4-5 minutes.

  4. Transfer to Baking Pan: Transfer the browned thighs, skin side up, to a baking pan. Place the pan in the preheated oven and bake the thighs for 20 minutes.

  5. Return to Skillet: Remove the thighs from the oven and transfer them along with the juices back to the nonstick skillet, which should be set over medium heat.

  6. Compress Thighs: Place another heavy skillet or any flat-bottomed pan with a weight inside on top of the thighs in the skillet, compressing them gently.

  7. Continue Cooking: Continue to sautรฉ the thighs until they are cooked through, which should take about 15-20 minutes, depending on the size of the thighs.

  8. Deglaze and Serve: Once the thighs are cooked, remove them from the skillet. Add the dry white wine to deglaze the pan, scraping up any browned bits. Pour the resulting sauce over the chicken thighs and serve immediately.
