Ingredients:

Ingredient Quantity
Butter 1 cup
Dark Brown Sugar 2 cups
Granulated Sugar 1 cup
Eggs 6
Flour 3 cups
Salt 1/2 tsp
Baking Powder 1/2 tsp
Milk 1 cup

Rum 1/2 cup
Butter (for glaze) 2 tbsp
Evaporated Milk 3 tbsp
Dark Brown Sugar (for glaze) 3/4 cup

Instructions:

  1. Preheat oven to 325°F. Grease and flour a 10″ tube pan.

  2. Cream butter and sugars until very light and fluffy.

  3. Add eggs one at a time, beating well after each addition.

  4. Combine dry ingredients (flour, salt, baking powder). Add alternately with milk and vanilla, starting and ending with the dry ingredients. Beat well with each addition.

  5. Fill prepared pan and bake for 1 hour and 35-40 minutes, or until a toothpick comes out clean.

  6. Cool completely then remove from the pan.

Rum Sauce:

  1. Combine all sauce ingredients in a heavy saucepan.

  2. Bring to a boil over medium heat, stirring occasionally.

  3. Cover and continue to boil for 1 minute to wash crystals down the side of the pan.

  4. Uncover and continue to boil for 3-4 minutes.

  5. Let it cool slightly, then serve over slices of cake.

Rum Glaze:

  1. Put all glaze ingredients in a small, heavy pan.

  2. Let it cook, stirring occasionally, until mixed well.

  3. Allow it to cook for a couple more minutes until it is thickened.

  4. Pour over the top of the cake for an added burst of flavor and a touch of elegance.
