- You have two options for cooking the rutabagas: boiling or microwaving.
Cooking Method Time Boiling 20-25 minutes Microwave 15-18 minutes - If boiling, place the diced rutabagas in a pot of boiling water and cook until tender, about 20 to 25 minutes.
- If microwaving, place the diced rutabagas in a microwave-safe dish with 1/2 cup of water and microwave for 15 to 18 minutes or until tender.
- Once cooked, drain the rutabagas, reserving some of the cooking liquid.

- Transfer the cooked rutabagas to a large mixing bowl.
- Using a potato masher or fork, mash the rutabagas until smooth, incorporating the reserved cooking liquid as needed to achieve your desired consistency.

- To the mashed rutabagas, add the eggs, half-and-half, sugar, corn syrup, salt, and ground nutmeg.
