Ingredients:

  • 1/2 lb raw shrimp
  • 1/2 tbsp cornstarch
  • 2 tbsp dry sherry
  • 1/2 cup bean sprouts
  • 2 shallots
  • 1/2 cup fresh mushrooms
  • 1/4 cup celery
  • 1/2 tbsp garlic
  • 1 package egg roll wrappers

Instructions:

  1. Prepare Shrimp Mixture:

    • In a bowl, mix together the raw shrimp, cornstarch, and dry sherry until well combined.
  2. Stir-Fry Shrimp:

    • Heat 1 tablespoon of oil in a wok or skillet until hot.
    • Add the shrimp mixture and stir-fry until the shrimp turns pink.
    • Remove the shrimp from the wok and set aside.
  3. Prepare Vegetable Mixture:

    • If needed, add more oil to the wok.
    • Stir-fry the bean sprouts, mushrooms, and shallots for 1 minute, then remove them from the wok and set aside.
  4. Stir-Fry Celery and Garlic:

    • Add a little more oil to the wok.
    • Stir-fry the celery and garlic for 2 minutes until fragrant.
  5. Combine and Cool:

    • Add the cooked shrimp and vegetable mixture back to the wok.
    • Toss everything together until well mixed.
    • Transfer the mixture to a colander to drain and cool for 15 minutes.
  6. Prepare Egg Roll Wrappers:

    • In a small bowl, make a sealer by stirring together 1 tablespoon of flour and 2 tablespoons of water.
    • Keep the egg roll wrappers under a damp towel to prevent them from drying out.
    • Place one egg roll wrapper with one corner facing you.
  7. Assemble Egg Rolls:

    • Place 3 tablespoons of the cooled filling in the center of the wrapper.
    • Fold the bottom corner over the filling.
    • Moisten the left and right corners with the sealer and fold them to the center, sealing them to the bottom corner.
    • Brush the sealer onto the top corner edges.
    • Roll the egg roll up away from you, enclosing the filling tightly.
    • Press the top corner onto the egg roll to seal it, resembling an envelope.
    • Repeat this process for each egg roll.
  8. Fry Egg Rolls:

    • Pour oil about 3 inches deep into a wok or Dutch oven.
    • Heat the oil to 375 degrees Fahrenheit.
    • Fry the egg rolls in batches of 3 or 4 at a time, turning them once, until they are golden brown.
    • Once fried, drain the egg rolls on a paper towel to remove excess oil.
