Description:

Ingredients:

  • 500g basmati rice
  • 100g butter
  • 1 onion, finely chopped
  • 1 sprig fresh thyme
  • 2 bay leaves
  • 2 cinnamon sticks
  • 8 cardamom pods
  • 3 cloves
  • Zest of 1 lemon
  • Chicken stock or water
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 160°C (fan) or 180°C (conventional).

  2. Rinse the basmati rice thoroughly under cold water, then drain well.

  3. Melt two-thirds of the butter in a large saucepan over medium heat.

  4. Add the finely chopped onion to the melted butter. Sauté for about 5 minutes until the onion turns translucent.

  5. Stir in the basmati rice, fresh thyme, bay leaves, cinnamon sticks, cardamom pods, cloves, and lemon zest. Cook for another minute, stirring gently to coat the rice with the buttery mixture.

  6. Pour in enough chicken stock or water to cover the rice. Season generously with salt and pepper to taste.

  7. Transfer the rice mixture into an oven-proof casserole dish, ensuring it’s evenly spread.

  8. Cover the casserole dish with a lid or foil and bake in the preheated oven for 25 minutes. This gentle baking process allows the rice to absorb the flavors and cook to perfection.

  9. Remove the casserole dish from the oven and let it sit, covered, for an additional 5 minutes. This resting period helps the rice to settle and finish cooking.

  10. Fluff the pilaf gently with a fork to separate the grains. Mix in the remaining butter to add a final touch of richness and flavor.
