Ingredients:

2 cups Chicken broth (vegetable broth for vegetarians)
1 head Broccoli, cut into florets
1/2 cup Flour
1 tsp Salt
1/4 cup Cashews (optional)

Instructions:

  1. Saute Onions: Heat butter in a saucepan over medium heat. Add chopped onions and saute until well browned.

  2. Spice Infusion: Stir in chili powder, black pepper, ground cumin, ground coriander, and turmeric. Cook, stirring, for about a minute until the spices are fragrant.

  3. Add Lentils: Add the red lentils, lemon juice, chicken broth (or vegetable broth), and coconut if using. Bring the mixture to a boil, then reduce the heat to low and simmer for 45-55 minutes, or until the lentils are tender. If the mixture becomes too thick during cooking, you may need to add a little hot water.

  4. Prepare Broccoli: While the lentils are simmering, steam the broccoli florets for about 7 minutes until they are tender but still crisp. Then, plunge them into cold water to stop the cooking process, and set aside.

  5. Thicken the Curry: Remove about 1/3 cup of liquid from the lentil mixture and transfer it to a small bowl. Add the flour and stir until a smooth paste forms. Return this paste to the saucepan.

  6. Incorporate Broccoli: Add the steamed broccoli florets and salt to the saucepan. If using, add cashews. Stir to combine all ingredients.

  7. Final Simmer: Simmer the curry for an additional 5 minutes to allow the flavors to meld together and the broccoli to absorb some of the sauce.

  8. Serve: Serve the broccoli dal curry over cooked basmati rice for a satisfying meal.
