Indonesian Heritage Chicken Soup (Pindang Ayam Jadul)
Ingredients:
- 1/2 kg chicken pieces
- 5 shallots, finely sliced
- 10 bird’s eye chilies, finely sliced
- 2 cm ginger, finely sliced
- 1 cm galangal, finely sliced
- 1/2 tsp ground turmeric
- 1 tsp tamarind paste
- 1 tsp roasted shrimp paste (terasi)
- 1 tomato, cut into quarters
- A handful of basil leaves (optional substitute: cilantro)
Instructions:

Heat 2 tablespoons of cooking oil in a pot over medium heat. Sauté the shallots, bird’s eye chilies, ginger, galangal, ground turmeric, tamarind paste, and roasted shrimp paste until fragrant.

Pour in 1 liter of boiling water. Bring to a boil.

Add the chicken pieces to the boiling water. Cover the pot and cook until the chicken is tender.

Once the chicken is cooked through, adjust the seasoning to taste.

Add the quartered tomatoes and basil leaves (or cilantro) to the soup. Stir gently.
