From my friend Judy Montagu’s food column in the Jerusalem Post — Without more ado, a steaming plate of murug – an Oriental chicken soup, or soupy chicken, served over rice.

Ingredients:

75g Garlic
1-2 Turmeric

1 Chicken
2 Vegetable bouillon cubes
24 cups Water
Potatoes
8-10 Coriander

Instructions:

  1. Begin by preparing the ingredients. Peel and slice the ginger, mince the garlic, and dice the onions.

  2. In the largest pot you have, combine the ginger, garlic, turmeric, diced onions, whole chicken, and vegetable bouillon cubes.

  3. Generously cover the ingredients with water, ensuring they are submerged completely.

  4. Place the pot over medium-high heat and bring the water to a gentle boil. Reduce the heat to medium-low and let the mixture simmer for about 45 minutes, allowing the flavors to meld together.

  5. After 45 minutes, add the potatoes to the pot. Continue simmering for an additional 15-20 minutes, or until the potatoes are tender and cooked through.

  6. As the soup nears readiness, finely chop the fresh coriander.

  7. Once the potatoes are done, stir in the chopped coriander and allow the flavors to infuse for a couple of minutes.

  8. Serve the murag over boiled rice, ensuring each serving contains plenty of the flavorful broth, chicken, and vegetables.
