Crispy Indonesian Fried Chicken (Ayam Goreng)
Ingredients:
- 1 whole chicken, cleaned and briefly parboiled to reduce fat
- Spices:
- 5 cloves garlic (crushed)
- 3 shallots (crushed)
- 1 segment turmeric (crushed)
- 1/2 tbsp ground coriander
- 2 bay leaves
- 1 kaffir lime leaf
- 1 stalk lemongrass (crushed)
- Salt, to taste
Instructions:

In a saucepan, add a small amount of water and bring it to a boil.

Once boiling, add the crushed garlic, shallots, turmeric, ground coriander, bay leaves, kaffir lime leaf, and lemongrass.

Add the chicken to the pan, season with salt, and taste the broth. Adjust salt according to preference. Allow it to simmer until the liquid reduces and the spices are absorbed. Remove from heat and set aside the chicken in an empty container to cool.

Heat a frying pan with cooking oil. Fry each piece of chicken until golden brown.
