Instructions:
-
Heat 6 tbsp oil in a pan over medium heat. Ensure the oil is hot enough to start sizzling but not smoking.
-
Add the chicken breasts to the pan. Allow them to cook undisturbed until they turn a beautiful golden brown color on one side, then flip them over to cook the other side. This should take approximately 10-12 minutes depending on the thickness of the chicken breasts.
-
Once the chicken is cooked through and golden brown, remove it from the oil and set it aside on a plate lined with paper towels to drain any excess oil.
-
In the same pan, add 1 tbsp oil. Allow it to heat up for a minute or two.
-
Add the chopped onions to the pan and sautΓ© them until they turn translucent and start to develop a pale golden color.
-
Once the onions are cooked, add all the masala powders – chili powder, coriander powder, turmeric powder, garam masala, and jeera powder. Stir well to combine.
-
Fry the masala powders with the onions for about a minute, allowing their flavors to bloom and infuse into the oil.
-
Add the cooked chicken breasts back into the pan along with the bitter melon (karela). Mix everything together until the chicken and bitter melon are evenly coated with the aromatic spices.
-
Cook the chicken and bitter melon mixture for an additional 5 minutes, allowing the flavors to meld together and the bitter melon to soften slightly.
-
Once everything is heated through and well combined, your Karela Chicken is ready to serve!
-
Plate up the Karela Chicken and serve it hot alongside some freshly made rotis or your favorite side dish. Enjoy the exotic flavors and the delightful fusion of spices in this unique dish!
