Instructions:

  1. Begin by deep frying the baby potatoes until they’re around 1/4th done. Once fried, peel them and set them aside for later use.
  2. Heat oil in a pan over medium heat. Add cumin seeds and sliced onions, and fry them until they turn golden brown.
  3. Add ginger-garlic paste to the pan and fry for 2-3 minutes until the raw smell disappears.
  4. Now, sprinkle turmeric powder, red chili powder, and coriander powder into the pan. Stir well and cook for about 5 minutes to allow the flavors to meld.
  5. Next, add chopped tomatoes to the pan and cook until the oil starts separating from the masala.
  6. Once the masala is cooked, add curd to the pan and mix well.
  7. Now, gently add the fried baby potatoes to the masala along with salt. Stir to coat the potatoes evenly with the masala.
  8. Cover the pan and let the Lahori Aloo simmer on low heat until the potatoes are fully cooked and tender.
  9. Once cooked, remove the pan from heat and sprinkle garam masala powder over the Lahori Aloo.
  10. Cover the pan again and let it sit for about 5 minutes to allow the flavors to infuse.
  11. Serve hot, garnished with fresh coriander leaves, alongside naan or rice for a complete meal experience.

Enjoy the tantalizing flavors of Lahori Aloo, a dish that perfectly balances spice and warmth, bringing the essence of Lahore’s culinary heritage to your table!
