Ingredients:

  • 2 cups fresh okra
  • 1/2 cup canola oil
  • 1/2 yellow onion
  • 7 cloves garlic
  • 1 tsp garlic powder
  • 1 tomato
  • 1 tsp coriander powder
  • 1 tsp cumin
  • 1/2 tsp turmeric
  • 1/4 tsp salt

Instructions:

Step Description
1. Prepare the okra by trimming the ends and cutting them into 1-2 inch pieces.
2. Heat canola oil in a skillet over medium heat, then add the prepared okra.
3. Sauté the okra until all the sticky juices evaporate and it turns golden brown.
4. Remove the sautéed okra from the skillet and set aside for later.
5. In the same skillet with the remaining oil, add chopped tomatoes and all the spices: garlic powder, coriander powder, cumin, turmeric, and salt.
6. Cook the tomato-spice mixture over low heat until it forms a thick, paste-like consistency.
7. Add finely chopped onions to the skillet along with the sautéed okra. Mix well to combine all ingredients.
8. Cover the skillet and let the curry simmer over low heat for 10-15 minutes, allowing the flavors to meld together.
9. Once cooked, transfer the Vegetarian Okra Curry to a serving dish.
10. Garnish with a sprinkle of garam masala or black pepper for an extra burst of flavor.
