Spinach and Rice Casserole 🍲

Description

Even if you don’t care for spinach…you gotta love this! Just forget about eating any meat or chicken, all you will want is this yummy spinach and rice dish.

Ingredients

  • 1/2 cup rice
  • 1 cup butter
  • 1/3 cup flour
  • 1 cup half-and-half
  • 3 cups milk
  • 2 eggs
  • 1/4 cup spinach
  • 1 1/2 cups green onion
  • 1/4 cup feta cheese
  • 1 cup parmesan cheese
  • Paprika

Instructions

  1. Preheat Oven: Set oven to 350 degrees Fahrenheit.

  2. Prepare Pan: Grease a 13″ x 9″ baking pan.

  3. Cook Rice: Cook 1-1/2 cups of rice according to directions; set aside.

  4. Prepare Cream Sauce: In a heavy-bottomed saucepan, melt 1 cup of butter. Add in flour and stir until thoroughly mixed (about 2 minutes), then allow to cool slightly.

  5. Heat Half and Half: In the microwave, heat the half and half until just boiling or to a “simmer”.

  6. Combine Ingredients: Pour the simmering half and half into the saucepan with the butter and flour mixture. Add the flour mixture into the milk mixture a little at a time, whisking to break up all the lumps. Then whisk in the eggs until creamy and smooth (about 10-15 minutes).

  7. Layer Casserole: Place the cooked and drained spinach in the bottom of the casserole dish. Add rice, feta cheese, and green onions, spreading evenly over the spinach. Sprinkle with salt and pepper to taste.

  8. Add Cream Sauce: Pour the cream sauce over the top of the casserole.

  9. Top with Cheese: Sprinkle with parmesan cheese and paprika.

  10. Bake: Bake for 20-25 minutes, until the casserole is heated through and the top is golden brown.
