  • Hard-cooked eggs (for garnish)

Instructions:

  1. Prepare the Ingredients:

    • Cook the egg noodles according to package instructions until al dente. Drain and set aside.
    • Grate the cheese and chop the spinach. Squeeze the spinach dry to remove excess moisture.
    • Dice the onion and set aside.
  2. Sauté the Onion and Spinach:

    • In a skillet, melt 1/2 tablespoon of butter over medium heat.
    • Add the diced onion and cook until tender and translucent.
    • Stir in the chopped spinach and cook until wilted. Season with salt and pepper to taste.
  3. Assemble the Casserole:

    • Preheat your oven to 350°F (175°C).
    • In a large mixing bowl, combine the cooked egg noodles with 2 tablespoons of butter, grated cheese, and 1/4 teaspoon of salt. Mix well to coat the noodles evenly.
    • Grease a baking dish with butter and layer the noodles and spinach mixture alternately, creating distinct layers.
  4. Top and Bake:

    • Sprinkle the top of the casserole with buttered bread crumbs for a crispy finish.
    • Place the casserole in the preheated oven and bake for about 35 minutes, or until the top is golden brown and the cheese is melted and bubbly.
  5. Serve and Enjoy:

    • Once baked, remove the casserole from the oven and let it cool slightly.
    • Garnish with slices of hard-cooked eggs for an extra touch of flavor and presentation.
    • Serve the Lokshyna and Spinach Casserole warm, and watch as it disappears from plates in no time!
