After some charming persuasion, we managed to snag the recipe and have since adapted it for home use. This comforting dish combines tender squash with a savory blend of flavors, making it perfect for any occasion.

Ingredients:

3-4 Yellow squash
1 Onion
2 Eggs
1 Salt
1 Can of evaporated milk
1/2 Cup of margarine
1/2 Teaspoon of celery seed
1/2 Teaspoon of pepper
2 Cups of cheddar cheese
1 Bell pepper
1/4 Cup of sugar
3/4 Cup of cracker crumbs

Instructions:

  1. Prepare Ingredients: Start by sautéing the onion and bell pepper in butter until they’re tender and fragrant. If you’re opting for a lower fat version, you can use 2 teaspoons of butter and enough water to sauté the vegetables.

  2. Cook Squash: Add the sliced yellow squash to the sautéed onion and bell pepper mixture. Cook until the squash is heated through and slightly softened.

  3. Combine Ingredients: Remove the mixture from heat, then add in the celery seed, evaporated milk, sugar, salt, eggs, and half of the cracker crumbs. Gently fold everything together until well combined.
