Description:
This impressive Egg Dip with Caviar is a delightful addition to any holiday spread, boasting a beautiful presentation with its vibrant colors. Despite the reservations of a few picky eaters, this recipe has stood the test of time, originating from a dear friend some three decades ago. The cooking time primarily involves chilling, with the preparation of hard-boiled eggs being the only substantial task beforehand.
Ingredients:
- 12 hard-boiled eggs
- 2 packets unflavored gelatin
- 1/2 cup cold water
- 1 cup boiling water
- 1 cup mayonnaise
- 1 1/2 tablespoons prepared mustard
- 1 tablespoon fresh lemon juice
- 1 onion, finely chopped
- 1 1/2 teaspoons garlic powder
- 1 teaspoon salt
- 1 1/2 teaspoons white pepper
- 1 tablespoon chopped pimiento
- 4 tablespoons finely chopped green bell peppers
- 1/2 cup sour cream
- Black caviar, for topping
Instructions:
-
In a large bowl, soften the gelatin in cold water for approximately 5 minutes, or until it’s fully softened.
-
Add boiling water to the bowl and stir until the gelatin is completely dissolved. Allow the mixture to cool to room temperature.
-
In another bowl, grate the hard-boiled eggs. Then, add mayonnaise, prepared mustard, fresh lemon juice, finely chopped onion, garlic powder, salt, white pepper, chopped pimiento, and finely chopped green bell peppers. Stir the mixture until well combined.
-
Add the egg mixture to the gelatin mixture, stirring gently until fully blended.
-
Coat a 2-quart mold with cooking spray to prevent sticking.
-
Pour the egg mixture into the prepared mold and refrigerate until it’s firm.
-
Once set, unmold the mixture onto a serving platter.
-
Cover the top of the molded egg dip with a generous layer of sour cream.
-
If desired, top the sour cream with a lavish garnish of black caviar, adding a touch of luxury to the dish.
-
Serve the Egg Dip with Caviar alongside crackers, ensuring they’re not overly seasoned to allow the flavors of the dip to shine through. Suggestions include Club crackers or sourdough bagel chips, providing the perfect canvas for this flavorful creation.
