Instructions:
Step | Description |
---|---|
1 | Heat a small amount of olive oil in a skillet over medium heat. |
2 | Slice the red bell pepper and onion. Crush the garlic. Add them to the skillet and sautΓ© until the vegetables are soft and tender, but not mushy. If using bottled roasted peppers, add them after the onions are almost done cooking. |
3 | Using a slotted spoon, remove the peppers and onions to a plate and keep them warm. |
4 | Drain excess oil from the skillet, leaving just enough to prevent the bread and eggs from sticking. |
5 | Reduce the heat to low. |
6 | Make a nest in each slice of bread by tearing out some of the center and place the bread slices into the skillet. Let the bread brown for a few seconds, then flip over. |
7 | Immediately crack an egg into the nests of each slice of bread. Cook until the eggs are set to your liking. You may flip them over if desired, but sunny side up is more attractive. (Tip: Placing a lid over the pan after cracking the eggs helps the yolks cook faster.) Be mindful not to set the heat too high to prevent burning the eggs and bread. |
8 | While the eggs are cooking, you can return the vegetables to the skillet and push them to one side to reheat if necessary. |
9 | Serve the eggs with the roasted peppers and onions on top of the egg nests or on the side. Season with salt and pepper to taste. |
Tips:
- Experiment with different types of bread for varied flavors.
- If using fresh peppers, roasting them beforehand adds depth to the dish.
- Adjust the cooking time to achieve your preferred level of egg doneness.
- For a quicker breakfast, prep the vegetables the night before.
