Ingredients:
- 3 tbsp olive oil
- 2 scallions, chopped
- 1 leek, thinly sliced
- Coarse salt, to taste
- Freshly ground pepper, to taste
- 6 tomatoes, chopped
- 4 oz cheese of your choice, shredded or crumbled (goat cheese, cheddar, etc.)
- 4 large eggs, separated

5 | Add chopped tomatoes to the skillet, cover, and cook for 2 more minutes. |

7 | In a separate bowl, using an electric mixer or whisk, beat egg whites with a pinch of salt and pepper until stiff peaks form. |
8 | Gently fold in the egg yolks to the beaten egg whites. |
