Instructions:

  1. Prepare Sweet Potatoes:

    • Prick sweet potatoes several times with a sharp knife.
    • Place on a baking sheet and bake in a preheated 375°F (190°C) oven until very soft when pierced, about 35-40 minutes.
    • Once cool enough to handle, peel sweet potatoes and process in a blender or food processor until smooth. You will need 1 cup of puree.
  2. Prepare Batter:

    • In a large bowl, using a mixer on medium speed, beat butter and sugar until well blended.
    • Add eggs one at a time, beating well after each addition.
    • Beat in 1 cup of sweet potato puree, along with the orange zest and vanilla.
  3. Prepare Dry Ingredients:

    • In another bowl, combine the all-purpose flour, baking powder, mace, and salt.
  4. Combine Batter:

    • Gradually add the flour mixture to the batter, mixing on low speed to incorporate the dry ingredients. Then, beat at medium speed until well blended.
  5. Bake:

    • Scrape the batter into a buttered 4 1/2 by 8 1/2-inch loaf pan.
    • Bake in a preheated 350°F (175°C) oven until a toothpick inserted in the center comes out clean, approximately 1 hour.

    • Invert the pan onto a serving plate and let the cake cool completely, approximately 1 hour.
