1 Red onion
2 tbsp Olive oil

Instructions:

  1. Peel and chop the sweet potatoes, unless organic. If organic, simply wash well and cut.

  2. Cut the red bell pepper and red onion into a medium dice.

  3. Preheat your oven to 350ยฐF (175ยฐC).

  4. In an 11×14-inch roasting pan, place the sweet potatoes, and drizzle with olive oil.

  5. Sprinkle the sweet potatoes with dried basil, sea salt, and garlic powder. Toss them in the pan to ensure even coating.

  6. Bake in the preheated oven until the sweet potatoes begin to soften, usually about 20-25 minutes.

  7. Add the diced red bell pepper and red onion to the pan, and stir to combine with the sweet potatoes.
