These Buttertart Muffins, originating from a cherished family recipe dating back to 1983, hold a special place in our hearts as they are Dad’s all-time favorite. Shared with love by my niece Kim, who amusingly forgot to include the butter the first time she made them (yet they still turned out splendidly!), these muffins have become a beloved tradition in our household ever since. Bursting with the goodness of golden raisins, crunchy walnuts, and the irresistible sweetness of Lyle’s Golden Syrup, these muffins are a delightful treat perfect for any time of day.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups golden raisins
  • 3/4 cup granulated sugar
  • 1/2 cup butter
  • 1/2 cup chopped walnuts
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon Lyle’s Golden Syrup

Instructions:

  1. In a saucepan over medium heat, combine the golden raisins, butter, sugar, eggs, milk, and vanilla extract.
  2. Stir the mixture over the heat for approximately 5 minutes, or until it becomes thick and just starts to boil.
  3. Remove the saucepan from the heat and quickly stir in the dry ingredients: all-purpose flour, baking powder, baking soda, and salt.
  4. Add in the chopped walnuts and stir until everything is well combined.
  5. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease the cups.
  6. Spoon the muffin batter evenly into the prepared muffin cups, filling each about two-thirds full.
  7. Bake the muffins in the preheated oven for approximately 18 minutes, or until they are golden brown and a toothpick inserted into the center comes out clean.
  8. Once the muffins are done baking, remove them from the oven and immediately drizzle 1 teaspoon of Lyle’s Golden Syrup over the top of each muffin while they are still hot.
  9. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
  10. Serve and enjoy these delicious Buttertart Muffins with your favorite hot beverage or as a sweet snack any time of the day.
