  1. In a large pot, heat oil over medium heat.

  3. In a separate bowl, combine 1 cup of chicken broth with cornstarch, stirring until smooth.
  4. Pour the cornstarch-broth mixture into the pot along with the remaining chicken broth, cubed tofu, sliced mushrooms, bamboo shoots, soy sauce, vinegar, sugar, and crushed red pepper flakes.   5. Add the frozen mixed vegetables, peeled shrimp, and chopped cilantro to the pot. Continue to simmer until the shrimp are just opaque and cooked through, about 10 minutes.
