These muthiyas are dedicated to dad, his favorite snack all year round. Imagine the surprise on his face when he tastes these delectable treats! Spending 2 1/2 hours making these is worth it. They’re perfect for the upcoming Cookathon with an appetizer theme. These muthiyas give the impression of laborious effort, but they’re not as difficult as they seem. The dough preparation requires some effort, but the rest is easy. Just a tip: Keep your windows open because things might get a bit smoky! I learned this recipe a couple of weeks back on Mirch Masala, Star Plus. Trust me, they’re really good, and your family will love them. Ingredients
- 1 cup soyabean nuggets (powdered)
- 1 cup semolina
- 1 cup cornflour
- 1 cup whole wheat flour
- 1 cup gram flour
- 1 cup green peas
- 1/2 potato (diced and boiled)
- 1 cup coriander leaves
- 1 green chili
- 1 tsp red chili powder
- Salt to taste
- 1 1/2 cups paneer (grated)
- 1 onion
- 1 cup coriander leaves
- 1 green chili

- Chutney
- Tomato ketchup
Instructions

Prepare the Dough:
- In a large mixing bowl, combine soyabean nuggets (powdered), semolina, cornflour, whole wheat flour, gram flour, and green peas. Mix well.
- Boil diced potato until tender. Once done, grate it and add it to the mixture.
- Prepare a coarse paste of pre-soaked yellow moong dal in a mixer.
- Similarly, prepare a paste of green peas.
- Add both pastes, grated potato, coriander leaves, green chilies, red chili powder, salt, and oil to the mixture.
- Grease your palms slightly and mix all ingredients to form a soft dough. Set aside.

Prepare the Filling:
- In a medium-sized mixing bowl, knead together grated paneer, finely chopped onion, coriander leaves, green chili, salt, and red chili powder. Set aside.

Cooking:
- Heat oil in a wok over medium-high flame.
- While the oil heats up, start making small round balls out of the prepared dough.
- Place a small amount of filling in the center of each ball.
- Roll the balls into a cylindrical shape.
- Deep fry the muthiyas until golden brown. Drain excess oil on kitchen napkins.
- Place the fried muthiyas in an oven-proof dish for easy reheating if needed.

- Serve the muthiyas hot with green chutney and/or tomato ketchup.
