Tonight, it graced my dinner table, bringing with it its irresistible flavors and comforting appeal. This dish is not just tasty but also incredibly easy to prepare, making it a perfect option for a satisfying meal or snack. Bursting with the freshness of tomatoes and the heartiness of potatoes, it promises a delightful culinary experience that’s hard to resist.
Ingredients:
- 1 cup flattened rice (poha), washed
- 1 teaspoon salt
- 1-2 green chilies, finely chopped
- 1 1/2 tablespoons lime juice
- 2 onions, finely chopped
- 1 1/2 cups tomatoes, finely chopped
- 2 tablespoons cilantro, chopped
- 1 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1 potato, boiled and cubed
- 1 tablespoon mustard seeds
- 1 tablespoon cumin seeds
- Curry leaves, a handful
- 1/4 cup groundnuts (peanuts)
- 1/4 cup cooking oil
Instructions:

1 | Wash the poha under running water to remove any impurities. |
2 | Drain the water completely and let the poha sit for about 15 minutes. |
3 | After 15 minutes, fluff up the poha with a fork to separate the grains. |
4 | In a mixing bowl, add salt, lime juice, turmeric powder, and red chili powder to the poha. Mix well and set aside. |
5 | Heat oil in a large saucepan or heavy-based pan over medium-high heat. |
6 | Add mustard seeds and cumin seeds. Allow them to crackle. |
7 | Add chopped onions, green chilies, and curry leaves. Stir-fry until onions turn golden brown. |
8 | Add the boiled potatoes and chopped tomatoes. Mix well and cook for 3-5 minutes. |
9 | Next, add groundnuts and the prepared poha mixture. Mix everything gently. |
10 | Reduce the heat to low and cook for an additional 5-7 minutes, stirring occasionally. |
11 | Keep mixing every minute to ensure the poha doesn’t stick to the bottom of the pan. |
12 | Once cooked, remove from heat and transfer to a serving dish. |
13 | Garnish with freshly chopped cilantro. |
