Golden Turmeric Chicken Congee

- 6 cups water
- 1/2 cup Kara coconut milk (small size)
- 1 bay leaf
- 1 lemongrass stalk, smashed
- Salt, to taste

- 4 shallots
- 3 cloves garlic
- 1-inch piece ginger
- 1 candlenut
- 1 lemongrass stalk, smashed
- 1 tsp turmeric powder
- Salt, to taste
- Pepper, to taste
- Chicken stock powder, to taste
- 1 1/2 cups water
- Oil, for sautéing

- Shredded chicken
- Fried shallots
- Celery leaves
- Onion crackers

Cooking Congee:
- Combine rice and water for congee. Stir well until rice becomes porridge-like. Keep stirring to prevent sticking. If rice grains remain, add water gradually until the congee is cooked through.

- Blend shallots, garlic, candlenut, and ginger until smooth.
- Heat oil in a pan. Sauté the blended spice paste, turmeric powder, and smashed lemongrass until fragrant. Season with salt, pepper, and chicken stock powder to taste. Adjust seasoning as needed.
