Golden Turmeric Chicken Delight

Fragrant Turmeric Chicken (Ayam Bumbu Kuning)

Ingredients:

  • 1/2 kg chicken, cleaned
  • 1 stalk lemongrass, pounded
  • 1 large piece galangal, pounded
  • 1 bay leaf
  • 1 kaffir lime leaf
  • Water, as needed
  • Cooking oil

Spice Paste:

  • 2 cloves garlic
  • 4 shallots
  • 1 small piece ginger, briefly roasted
  • 1 small piece turmeric, briefly roasted
  • 2 candlenuts, briefly roasted
  • 1 tsp coriander seeds
  • Salt, to taste
  • Sugar, to taste
  • Ground white pepper, to taste

Instructions:

  1. Prepare the Chicken: Clean the chicken thoroughly and briefly parboil with water, bay leaf until partially cooked. Discard the water once boiled.

  2. Prepare the Spice Paste: Grind all the spice paste ingredients until smooth using a mortar and pestle.

  3. Cooking Process:

    • Heat cooking oil in a pan. Sauté bay leaf, kaffir lime leaf, galangal, and lemongrass until fragrant.
    • Add the spice paste and sauté until fragrant.
    • Add the chicken, cover the pan, and let it cook for 5 minutes.
    • Pour in water and simmer, covered, until the liquid reduces (approximately 30 minutes).
  4. Serve: Remove from heat and serve either as is or deep-fry for added crispiness.
