Fragrant Turmeric Chicken (Ayam Bumbu Kuning)
Ingredients:
- 1/2 kg chicken, cleaned
- 1 stalk lemongrass, pounded
- 1 large piece galangal, pounded
- 1 bay leaf
- 1 kaffir lime leaf
- Water, as needed
- Cooking oil
Spice Paste:
- 2 cloves garlic
- 4 shallots
- 1 small piece ginger, briefly roasted
- 1 small piece turmeric, briefly roasted
- 2 candlenuts, briefly roasted
- 1 tsp coriander seeds
- Salt, to taste
- Sugar, to taste
- Ground white pepper, to taste
Instructions:

Prepare the Chicken: Clean the chicken thoroughly and briefly parboil with water, bay leaf until partially cooked. Discard the water once boiled.

Prepare the Spice Paste: Grind all the spice paste ingredients until smooth using a mortar and pestle.

Cooking Process:
- Heat cooking oil in a pan. Sauté bay leaf, kaffir lime leaf, galangal, and lemongrass until fragrant.
- Add the spice paste and sauté until fragrant.
- Add the chicken, cover the pan, and let it cook for 5 minutes.
- Pour in water and simmer, covered, until the liquid reduces (approximately 30 minutes).

Serve: Remove from heat and serve either as is or deep-fry for added crispiness.
