Instructions:

  1. Mix all Ingredients:
    In a mixing bowl, combine gram flour, bicarbonate of soda, ajwain, salt, and turmeric powder.

  2. Prepare the Dough:
    Gradually add water to the dry ingredients, stirring continuously, until a very soft dough is formed.

  3. Shape the Papdi:
    Take a fistful of the dough and place it on a greased polythene sheet. Using the base of your palm, drag the dough in a straight line from the starting point. Use your other hand to hold the dough for support.

  4. Fry the Papdi:
    Heat oil in a heavy wide pan. Form 3-4 strips of the dough and carefully place them in the hot oil. Fry on medium heat until the papdi turns crisp but not brown.

  5. Drain and Cool:
    Once the papdi is cooked, remove from the oil and drain any excess oil on paper towels. Allow them to cool completely.

  6. Serve:
    Once cooled and crisp, serve the papdi with tea or chutney for a delightful snack.
