Instructions

  1. Prepare the Turmeric: Start by preparing the fresh turmeric. Make sure to wear disposable gloves as fresh turmeric can stain your hands. Peel the turmeric carefully and then cut it into small cubes of about half a centimeter. If you prefer, you can cut them into even smaller pieces.

  2. Cook the Onion: In a large saucepan, melt the butter over medium heat. Once the butter is melted, add the finely chopped white onion and sauté until it becomes translucent and soft.

  3. Toast the Rice: Add the Carnaroli rice to the pan with the onions. Stir the rice for a minute or two, allowing it to absorb the butter and slightly toast.

  4. Deglaze with Wine: Pour in the white wine, stirring constantly. Let the wine evaporate completely, allowing the rice to soak up its flavors.

  5. Add the Broth: Gradually add the vegetable broth, a little at a time, allowing the rice to absorb the liquid before adding more. Stir the risotto frequently and continue cooking until the rice is al dente and creamy, which should take about 18-20 minutes.

  6. Finish the Risotto: Once the rice is cooked, turn off the heat. Stir in the grated Parmigiano Reggiano and the diced fresh turmeric. If desired, add a knob of butter for extra creaminess. Adjust the seasoning with salt and black pepper to taste.
