Not-Chicken Soup Recipe

Description:

This delightful veggie-based “chicken” soup, inspired by a Mollie Katzen recipe, is a flavorful twist on a classic. Instead of discarding the vegetables, consider repurposing them into a tasty kugel by mashing them with eggs, oil, and matzo meal. It’s a versatile dish perfect for any occasion, from weeknight dinners to potluck gatherings.

Ingredients:

  • 8 cups water
  • 2 teaspoons salt
  • 1 parsnip, chopped
  • 2 carrots, chopped
  • 2 onions, chopped
  • 8-10 garlic cloves, minced
  • 2 celery stalks, chopped
  • 1 mushroom, sliced
  • 1/2 teaspoon turmeric
  • Black pepper, to taste

Instructions:

Step Details
1 Combine everything in a large pot: In a large pot, combine the water, salt, chopped parsnip, carrots, onions, minced garlic, celery, mushroom slices, turmeric, and black pepper. Stir well to ensure all ingredients are evenly distributed.
2 Bring to a boil, lower heat, and partially cover: Place the pot over medium-high heat and bring the soup to a gentle boil. Once boiling, reduce the heat to low and partially cover the pot with a lid.
3 Cook slowly for 1-2 hours: Allow the soup to simmer gently for 1 to 2 hours, stirring occasionally. This slow cooking process allows the flavors to meld and develop into a rich, savory broth.
4 Turn off heat and let soup cool to room temperature: Once the soup has cooked to perfection, turn off the heat and allow it to cool to room temperature. This step helps to enhance the flavors even further.
5 Strain out and discard all the vegetables: Using a fine mesh strainer or slotted spoon, carefully remove and discard all of the cooked vegetables from the soup, leaving behind a clear, flavorful broth.
6 Heat gently just before serving: When you’re ready to enjoy the soup, gently reheat it over low heat until warmed through. Be careful not to boil the soup, as this can affect the texture and flavor.
7 Serve with matzoh balls: For an extra special touch, prepare matzoh balls separately according to your favorite recipe. Serve the hot soup with a generous helping of matzoh balls, allowing each guest to customize their bowl to their liking.
8 Optional: Cook or reheat matzoh balls in the soup: If you prefer, you can cook or reheat the matzoh balls directly in the soup. This not only saves time but also infuses the matzoh balls with the delicious flavors of the broth. Plus, thanks to the turmeric, the matzoh balls will take on a beautiful golden color, adding visual appeal to your soup.
