Ingredients

Instructions

  1. Prepare Milk Mixture

    • In a saucepan, heat the milk until it is warm but not boiling.
    • Remove from heat and stir in the light brown sugar, salt, and 1/4 cup of butter until well blended.
    • Let the mixture cool to lukewarm.
  2. Activate Yeast

    • In a large bowl, sprinkle the active dry yeast over the warm water.
    • Stir gently to dissolve the yeast.
    • Add the lukewarm milk mixture to the bowl with yeast-water mixture and stir to combine.
  3. Mix Dough

    • Gradually add 4 cups of whole wheat flour to the bowl.

    • Gradually add the remaining whole wheat flour, mixing well after each addition.
    • Once the dough becomes too stiff to mix with a spoon, use your hands to incorporate the flour until a stiff dough forms.
  4. Knead Dough

    • Turn the dough out onto a lightly floured surface.
    • Knead the dough for about 5 minutes until it is smooth and elastic.
  5. First Rise

    • Place the kneaded dough in a greased large bowl, turning once to coat the dough with grease.
    • Cover the bowl with a towel and let it rise in a warm place (around 85°F) until it doubles in size, about 1 hour.
  6. Shape the Loaves

    • Once doubled in size, punch down the dough and turn it out onto a floured surface.
    • Divide the dough into halves.
    • Cover and let it rest for about 10 minutes.
    • Divide each half into two pieces and roll each piece into a 12-inch strip.
    • Twist two strips together and repeat with the remaining pieces.
    • Roll each twisted strip into a ball and place into greased 9x5x2-3/4 inch loaf pans, shaping them to fit evenly into the pans.
  7. Second Rise

    • Brush the tops of the loaves with melted butter.
    • Let the loaves rise in a warm place until the dough rises to the tops of the pans, about 1 hour.
  8. Bake

    • Preheat the oven to 400°F (200°C).
    • Bake the loaves in the middle of the oven for 35-40 minutes, until golden brown and baked through.
    • Remove the loaves from the oven and immediately turn them out onto racks.
    • Brush the tops of the loaves with additional melted butter while still warm.
  9. Cool and Serve

    • Allow the bread to cool completely on racks before slicing.
