8 Veal cutlets
1 Egg
1 cup Milk
1/2 cup All-purpose flour
1/2 cup Breadcrumbs
2 tbsp Butter
3 tbsp Olive oil
1 slice Bacon
1 Onion
3 Garlic cloves
1/2 cup Dry red wine
1 can Italian tomatoes
1 cup Tomato puree
1 tbsp Basil
1 tbsp Parsley
1 tbsp Fresh oregano
1/2 tsp Dried red pepper flakes
1 cup Parmesan cheese
8 slices Mozzarella cheese

Instructions:

  1. Prepare the Veal Cutlets:

    • Cover your work surface with plastic wrap.
    • Place the veal cutlets on the plastic, leaving space between each one.
    • Cover with another piece of plastic wrap.
    • Pound the cutlets to 1/8-inch thickness using a meat mallet.
    • Season lightly with salt and pepper on both sides.
  2. Coat the Cutlets:

    • Place the flour in a shallow bowl.
    • Place the breadcrumbs in another shallow bowl.
    • In a separate shallow bowl, beat the egg and milk together.
    • Dredge each flattened veal chop in flour, shaking off any excess.
    • Dip in the egg wash, ensuring both sides are coated.
    • Coat both sides with breadcrumbs.
  3. Cook the Veal:

    • Heat 2 tablespoons of olive oil and butter in a large, nonstick skillet over medium-high heat.
    • Sauté the veal until golden brown on both sides, approximately 2 minutes per side.
    • Once cooked, transfer the veal to a plate and set aside.
    • Add the bacon to the skillet and fry until crisp. Remove from the pan and set aside.
  4. Prepare the Sauce:

    • In the same skillet, add 1 tablespoon of olive oil and the diced onion. Cook until translucent, about 6 minutes.
    • Add the minced garlic and sauté for an additional 30 seconds until fragrant.
    • Pour in the red wine and cook, stirring, to deglaze the pan for about 2 minutes.
    • Stir in the Italian tomatoes, tomato puree, basil, parsley, oregano, and dried red pepper flakes.
    • Bring the sauce to a boil, then reduce the heat to medium.
    • Add the cooked bacon back to the skillet and simmer for approximately 10 minutes until the sauce thickens slightly, stirring occasionally.
  5. Assemble and Bake:

    • Preheat your oven to 375°F (190°C).
    • Arrange the cooked veal cutlets on top of the sauce in the skillet, spooning additional sauce over each one.
    • Sprinkle Parmesan cheese over each cutlet, then place a slice of mozzarella on top.
    • Lower the heat to medium-low, cover the skillet, and cook until the veal is tender and the cheese is melted, approximately 5-6 minutes.
  6. Serve:

    • Serve the Veal Parmesan immediately, allowing 2 cutlets per person.
    • Optionally, serve with noodles or your favorite side dish for a complete meal.
