Nut Cake (Nussen Kuchen) 🍰

Description: Worth making. Once you did, it’s not hard. Very light in taste. If you like nuts you will like this. Version of a very old recipe.

Ingredients:

Ingredients Quantities
Flour 2 cups
Butter 3/4 cup
Cream cheese 4 oz
Canned milk 8 oz
Eggs 6
Sugar 1 cup
Flour 6 tbsp
Walnuts 2 cups

Instructions:

  1. Preparation Time: 2 hours 30 minutes
  2. Cooking Time: 35 minutes
  3. Total Time: 3 hours 5 minutes

Dough Preparation:

  1. If you like, you can make the dough a day ahead. It is easier to work with.
  2. With a pastry blender, cut the butter into the flour until it resembles coarse meal.
  3. Cut in the cream cheese.
  4. Flour your hands.
  5. Pour in the canned milk a little at a time.
  6. Gently mix the dough with your hands to form a ball. Be careful not to overwork the dough.
  7. Wrap the dough in plastic wrap and refrigerate for about 1-2 hours, or best overnight.

Filling Preparation:

  1. In a small bowl, beat 1 cup of sugar into the egg yolks until light yellow and stiff.
  2. In a large bowl, beat the egg whites until stiff.
  3. Slowly fold the yolk mixture into the whites.
  4. Mix the flour and walnuts together, then gently add to the egg mixture. Try not to stir out all your egg whites; you want air to be left to keep this moist and light.

Assembly and Baking:

  1. Preheat your oven to 350Β°F (175Β°C).
  2. Spray a 9×13″ pan very lightly.
  3. Roll out half of the dough and place it in the bottom of the pan.
  4. Pour the walnut mixture over the dough.
  5. Roll out the remaining dough to fit over the top and fit closely around the sides.
  6. Bake in the preheated oven for 35-40 minutes, or until the top is golden brown.
  7. Once cooled, cut into squares and sprinkle with powdered sugar.
