Ingredients:

  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup shortening
  • 1 cup brown sugar
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1-2 cups walnuts (optional)
  • 2 1/2 cups quick-cooking oats

Instructions:

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit.

  2. Prepare Dry Ingredients: In a bowl, sift together the flour, baking powder, baking soda, and salt. If you don’t have a sifter, simply combine these ingredients in a bowl and “slice” through them with a knife several times in all directions. Set aside.

  3. Cream Shortening and Sugars: In a separate large mixing bowl, cream together the shortening, brown sugar, and white sugar until the mixture is light and fluffy.

  4. Incorporate Eggs and Vanilla: Add the eggs to the creamed mixture one at a time, mixing well after each addition. Blend in the vanilla extract until well combined.

  5. Gradually Add Dry Ingredients: Gradually add the dry ingredients to the creamed mixture, mixing until a smooth dough forms.

  6. Stir in Oats (and Walnuts if Desired): Stir in the quick-cooking oats until evenly distributed throughout the dough. If you’re using walnuts, add them at this stage and mix well. You can adjust the amount of walnuts based on your preference; Veronica suggests around 2 cups for a nutty flavor burst!

  7. Shape the Cookies: Using a small melon ball scoop or a spoon, shape the dough into balls and place them onto a greased baking sheet. Make sure to leave enough space between each cookie for spreading during baking.

  8. Bake: Place the baking sheet in the preheated oven and bake the cookies for 10 to 12 minutes, or until they are lightly golden brown around the edges.

  9. Cool and Serve: Once baked, remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

  10. Enjoy! Once cooled, serve these out-of-this-world oatmeal cookies and watch them disappear in no time!

These cookies are perfect for any occasion, whether you’re hosting a gathering, treating yourself after a long day, or surprising your loved ones with a homemade delight. Get ready to indulge in the irresistible combination of chewy oats, crunchy walnuts (if you choose to include them), and sweet, buttery goodness. Veronica’s recipe promises a batch of cookies that are sure to become a family favorite, just like they did in her household!
