Irish Bread Pudding With Caramel-Whiskey Sauce Recipe

Description:
Indulge in the comforting flavors of this Irish Bread Pudding with a decadent Caramel-Whiskey Sauce, a delightful dessert that marries the warmth of wholesome grains with the richness of caramel and a hint of whiskey, perfect for those cozy evenings or festive gatherings.

Ingredients:

Ingredient Quantity
Light butter 1/4 cup
French baguettes 1 loaf
Raisins 1/2 cup
1% low-fat milk 3/4 cup
Sugar 1 3/4 cups
Vanilla extract 1 teaspoon
Eggs 2
Cream cheese 1 tablespoon
Cinnamon 2 teaspoons
Water 1/4 cup
Irish whiskey 1/4 cup

Caramel-Whiskey Sauce:

  1. In a small heavy saucepan over medium-high heat, combine sugar and water.
  2. Cook until sugar dissolves, stirring constantly, about 5 minutes.
  3. Continue cooking for an additional 15 minutes or until the mixture turns golden (avoid stirring during this time).
  4. Remove from heat and carefully add butter and cream cheese, stirring constantly with a whisk; be cautious as the mixture will be hot and may bubble vigorously.
  5. Allow the sauce to cool slightly, then stir in whiskey and milk until well combined.

Pudding:

  1. Preheat your oven to 350°F (175°C).
  2. Brush melted butter onto one side of the French bread slices and place them, buttered sides up, on a baking sheet.
  3. Bake the bread at 350°F (175°C) for approximately 10 minutes or until lightly toasted.
  4. Once toasted, cut the bread into 1/2-inch cubes and set aside.
  5. In a small bowl, combine raisins and whiskey, then cover and let stand for about 10 minutes or until the raisins are softened (do not drain).
  6. In a large bowl, whisk together 1% milk, sugar, vanilla extract, eggs, and cream cheese until well combined.
  7. Add the bread cubes and raisin mixture to the milk mixture, gently pressing down to ensure the bread is moistened, and let it stand for 15 minutes.
  8. Spoon the bread mixture into a 13 x 9-inch baking dish that has been coated with cooking spray.
  9. In a separate bowl, mix together 1 tablespoon of sugar and cinnamon, then sprinkle this mixture evenly over the pudding.
  10. Bake the pudding at 350°F (175°C) for approximately 35 minutes or until it is set and golden brown.

Serving:
Serve the warm Irish Bread Pudding with the prepared Caramel-Whiskey Sauce for a truly indulgent dessert experience. Optionally, you can substitute 1/4 cup of apple juice for the Irish whiskey for a non-alcoholic variation. Enjoy the rich flavors and comforting aroma of this delightful treat, perfect for any occasion!
