Instructions:

  1. Boil Pasta: Boil water and cook the ziti according to package directions. While it is cooking, proceed with the next steps.

  2. Prepare Zucchini: Slice the zucchini into rounds. In a skillet, heat 1/4 cup of olive oil over medium heat and fry the zucchini until browned on both sides. Remove from the pan and drain on paper towels.

  3. Prepare Sauce: In a saucepan, heat the remaining 1/4 cup of olive oil. Add the onion and cook until translucent. Then, add the minced garlic and cook for 2 minutes. Add the diced tomatoes, basil leaves, parsley, salt, and pepper. Simmer uncovered for 20 minutes.
