Ingredients:
| Quantity | Ingredient |
|---|---|
| 10 oz | Bow Tie Pasta |
| 2 | Zucchini |
| – | Olive Oil |
| 2 | Tomatoes |
| 4 | Fresh Basil |
| 1 | Parmesan Cheese, grated (optional) |
| 1/4 cup | Reserved Pasta Water |
| – | Salt and Pepper, to taste |
Instructions:
-
Boil the Pasta: - Bring a large pot of salted water to a boil.
- Add the bow tie pasta and cook according to package instructions until al dente.
- Before draining, reserve 1/2 cup of the pasta cooking water. This will be used later to make the sauce.

-
Saute the Zucchini: - While the pasta is cooking, prepare the zucchini.
- Trim the ends off the zucchini and slice them into rounds or half moons.
- In a large skillet, heat olive oil over medium heat.
- Add the zucchini slices to the skillet and sauté until they are golden around the edges, about 5-6 minutes.
- Season with salt and pepper to taste.

-
Combine Pasta and Zucchini: - Once the zucchini is cooked, add the drained bow tie pasta to the skillet.
- Continue to sauté everything together for an additional 3 minutes, allowing the flavors to blend.

-
Make the Sauce: - Remove the skillet from heat.
- Stir in grated Parmesan cheese (if using) until it starts to melt.
- Gradually add the reserved pasta water, a little at a time, stirring continuously, until the sauce reaches your desired consistency.

-
Add Tomato and Basil: - Gently fold in the diced tomatoes and torn fresh basil leaves.
- The residual heat from the pasta will lightly cook the tomatoes and wilt the basil.

-
Adjust Seasoning and Serve: - Taste the pasta and adjust the seasoning with more salt and pepper if needed.
- Serve the Bow Tie Pasta With Zucchini, Tomato, and Basil immediately, garnished with extra basil leaves and a sprinkle of Parmesan cheese if desired.
