Description:

A quick, delicious side dish that goes with just about anything. Garden-fresh vegetables are better but you can’t always get them.

Ingredients:

3 zucchini
4 tomatoes
3/4 cup parmesan cheese
2 cloves garlic
1 tsp dried thyme
To taste salt and pepper
2 tbsp olive oil

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).

  2. Layer the Vegetables: Begin by placing half of the zucchini slices in an ungreased 8-inch square baking dish.

  3. Add Tomatoes: Layer half of the tomatoes on top of the zucchini.

  4. Sprinkle Cheese: Sprinkle 1/4 cup of parmesan cheese evenly over the tomatoes.

  5. Repeat Layers: Add the remaining zucchini and tomatoes in layers over the cheese.
