Instructions:

  1. Preheat oven: Preheat your oven to 180°C (350°F).

  2. Prepare pudding batter: In a mixing bowl, beat together the sugar, egg, butter, and jam until the mixture becomes pale and fluffy.

  3. Combine dry ingredients: In a separate bowl, sift together the cake flour, bicarbonate of soda, and salt.

  4. Mix wet ingredients: In another bowl, mix the milk, vinegar, and vanilla essence.

  5. Combine mixtures: Alternating between the flour mixture and the milk mixture, fold them into the egg mixture until well incorporated.

  6. Prepare baking dish: Butter a large baking dish and pour the batter into it. Cover the dish with foil, shiny side down.

  7. Bake: Place the baking dish in the preheated oven and bake for 45-50 minutes or until the pudding is firm and a skewer inserted into the center comes out clean.

  8. Remove foil: About 10 minutes before the end of the baking time, remove the foil to allow the pudding to brown on top.
